Bitches Love Brunch

So for absolutely no good reason I’ve avoided Pinterest up until last week, and now my eyes have been opened to a whole new world.

Everything is SO CUTE and there are so many great ideas for… well, everything.

So when manfriend was out for the weekend camping, I decided to have some ladies over for a Bitches Love Brunch Extravaganza (working on trademarking that title) full of Pinterest ideas.

Mini frittatas, hash brown cups, fruit salad, a blueberry tres leches french toast bake (!!!!), and of course mimosas were on the menu. The best part? Everything going in the oven was baking at 350 degrees so I could multitask like my life depended on it.

For the frittatas, just chop up some veggies (I used tomato, red bell pepper, and green onion) and place a spoonful in each cup of a muffin tin. SPRAY YOUR TIN WITH NONSTICK!! I used melted butter and I’ve got a lottttttt of cleaning to do with my tin.

Scramble some eggs and fill the cups. Bake the little eggies for about 20-25 minutes, until the eggs have set.

Grab another muffin tin for cheesy hash brown cups. Just mix some (thawed) hash browns with salt, pepper, and shredded cheese. Prepare a muffin tin by brushing with oil or butter, and fill up the cups with the potato/cheese mixture and press down in the middle to form a little cup. Bake these for about 45 minutes, until it’s gotten nice and crispy on the outside.

The blueberry tres leches french toast bake came from me mixing two different recipes for tres leches french toast and a blueberry french toast bake. I used one loaf of challah bread, cubed and a bit stale. For the egg mixture, beat 9 eggs with 3/4 cup milk, 1/2 cup sweetened condensed milk, 1/2 cup evaporated milk, 1 1/2 teaspoons cinnamon, and 2 teaspoons of vanilla extract. Combine the bread and egg mixture with blueberries in a prepared 9×13 dish, and soak the bread overnight. Pop the bake in the oven for 30 minutes covered, then 20 minutes uncovered.

Once it’s done, drizzle some more condensed milk over the top!

Get your table set with some fresh fruit, bacon, and sausage, and you’ve got a brunch party for the books!
