Everything-in-your-fridge pasta

Apparently it’s national pasta day, and my boyfriend (who’s on a low/no carb eating routine) is out of town which means I get to stuff my face with all the carbs I want. It’s like this was meant to be.

Dug through my fridge and made a sauce of pretty much anything I could find. No real measurements here, but here’s what I used:

  • Tomatoes
  • Italian sausage
  • Onion
  • Roasted red pepper
  • Garlic
  • Olive oil
  • Pasta
  • Salt
  • Pepper
  • Italian seasoning
  • Basil
  • Trader Joe’s harissa salsa (just trust me)

Get a pot of water boiling, and season generously with salt. Once it’s at a roaring boil, add your pasta and cook till it’s a minute under the suggested time on the package.

While that’s boiling, heat up some olive oil in a large skillet. Add your chopped tomatoes and red peppers and let those cook down over high heat. The tomatoes will start to break down and form a sauce.


When your tomatoes are especially soft and mushy, add some chopped garlic and use a wooden spoon or spatula to crush the tomatoes a bit more. Add a tablespoon or so of the harissa salsa, and sprinkle with salt and pepper, along with the Italian seasoning.


“Add salsa????” I know, it sounds weird. But this harissa salsa is made up of harissa and roasted peppers and gives a nice kick to everything.


Add your sausage and onion and cook the mixture together. It will be chunky, but that’s fine! We’re going to make it saucy later.

Once your pasta is done, throw it in the pan and add some of the pasta water. This will dilute the sauce mixture you just made and help coat the pasta in all that tomato-y goodness.


Keep cooking, stirring and flipping constantly, and top with chopped fresh basil.
